Victorinox 8-Inch Chef's Knife, Black Fibrox Handle Reviews
I bought this knife recently and I am very impressed with its sharpness. Now cutting is a joy and it cuts everything like butter. I also bought a Shun 6' chef's knife which costs more than 2 times of this one, but the feeling of cutting is similar. My only complain is this one doesn't last very long, we cook every day and it needs sharpening about every 2-3 months.
The knife is well balanced, has a good grip and feel in the handle. The standard Europe/American 20% angled blade came sharp, but I honed it a bit more. It holds a good edge after being straightened on the steel. The knife feels substantial but not too heavy. I find it equally useful in mincing and slicing.
I saw the review of this knife in Cooks mag. It bested many knifes costing $100 - $150 and was rated in the top 3 of the the knives reviewed. It lives up to all my expectations and is a joy to use.
